1 teaspoon garam masala
1/2 cup plain yogurt

Here’s a step-by-step guide on how to prepare mutton curry:

Heat some oil in a large, deep pan or a pressure cooker.

Add the chopped onions and sauté until they become golden brown.

Add the ginger-garlic paste and green chilies. Sauté for a minute until the raw smell disappears.

Add the pureed tomatoes and cook until the oil separates from the mixture.

In a small bowl, whisk the yogurt until smooth and add it to the pan. Mix well.

Add the red chili powder, turmeric powder, coriander powder, cumin powder, and salt. Stir the spices into the mixture for a minute.

Add the mutton pieces to the pan and mix well, ensuring that the meat is coated with the spice mixture.

If using a pressure cooker, close the lid and cook the mutton on medium heat for about 4-5 whistles or until the meat is tender. If using a regular pan, cover it and simmer on low heat until the mutton is cooked and tender, which can take around 1.5 to 2 hours. Make sure to stir occasionally and add water if required to prevent sticking.

Once the mutton is cooked, check the consistency of the gravy. If it’s too thick, add some water and adjust the salt and spices according to your taste.

Sprinkle garam masala over the curry and mix well. Let it simmer for a few more minutes.
