Nihari is a traditional Pakistani and Indian dish known for its rich and flavorful meat stew. It is typically made with slow-cooked beef or lamb, and a blend of aromatic spices. Here’s a recipe to help you make nihari at home:
Ingredients:
1 kg beef or lamb, bone-in
3 tablespoons vegetable oil or ghee (clarified butter)
2 onions, finely sliced
2 tablespoons ginger-garlic paste
2 tablespoons nihari masala (available at Indian/Pakistani grocery stores)
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1/2 teaspoon garam masala powder
Salt to taste
4 cups water
2 tablespoons wheat flour (optional, for thickening)
Fresh ginger slices, chopped cilantro, and green chilies for garnish
Lemon wedges for serving
Naan or rice for serving
Instructions:
Heat the vegetable oil or ghee in a large, heavy-bottomed pot or pressure cooker over medium heat.
Add the sliced onions and sauté until golden brown. This will add flavor and color to the nihari.
Add the ginger-garlic paste and cook for another minute until fragrant.
Now, add the beef or lamb pieces to the pot and cook until they are browned on all sides. This will help seal in the juices and enhance the flavor.
In a small bowl, mix together the nihari masala, turmeric powder, red chili powder, coriander powder, garam masala powder, and salt. Add this spice mixture to the pot and cook for a minute to roast the spices.
Pour in the water, making sure it covers the meat completely. Stir well to combine all the ingredients. If using a pressure cooker, secure the lid and cook on medium heat for about 20-25 minutes or until the meat is tender. If using a regular pot, cover it and let it simmer for 2-3 hours until the meat becomes tender and the flavors meld together.
If you prefer a thicker gravy, mix the wheat flour with a little water to make a smooth paste. Add this paste to the pot and cook for an additional 10-15 minutes until the gravy thickens.
Taste and adjust the seasoning if needed. Remember that nihari is traditionally a rich and spicy dish, but you can adjust the spice levels according to your preference.
Serve the nihari hot, garnished with fresh ginger slices, chopped cilantro, and green chilies. Squeeze a bit of lemon juice over the top for added tanginess. It is usually enjoyed with naan bread or steamed rice.
Nihari is a dish that requires slow cooking to develop its rich flavors, so be patient and enjoy the process. It’s a delightful meal that’s perfect for special occasions or when you want to indulge in a hearty and aromatic dish.
