Rassagulla

To make Rasgulla, a popular Indian sweet, you’ll need a few basic ingredients and follow a specific cooking technique. Here’s a simple recipe to make Rasgulla:

Ingredients:

1 liter full-fat milk
2 tablespoons lemon juice or vinegar
1 cup sugar
4 cups water
A pinch of cardamom powder (optional)
A few strands of saffron (optional)
Chopped pistachios or almonds for garnishing (optional)
Instructions:

In a large pot, bring the milk to a boil over medium heat. Once it starts boiling, reduce the heat to low.

Gradually add lemon juice or vinegar to the milk while stirring continuously. The acid will curdle the milk, separating the whey from the solids (paneer or cheese). If the milk doesn’t curdle completely, add a little more lemon juice or vinegar until it does.

Once the milk has completely curdled, turn off the heat. Let it sit for a minute or two.

Place a muslin cloth or cheesecloth over a strainer and pour the curdled milk into it. Rinse the paneer under cold water to remove any lemony flavor. Gather the edges of the cloth and squeeze out any excess liquid.

Hang the cloth with the paneer for about 30 minutes to drain off the whey. This step is crucial to ensure the right consistency of the paneer.

After 30 minutes, remove the paneer from the cloth and knead it on a clean surface until it becomes smooth and free of lumps. This process helps in making soft Rasgullas.

Divide the paneer into small portions and roll them into smooth, crack-free balls. Keep them covered with a damp cloth to prevent drying.

In a large pot, combine the sugar and water. Bring it to a boil over medium heat, stirring occasionally.

Gently drop the paneer balls into the boiling syrup. Cover the pot with a lid and let it cook on medium heat for about 15 minutes. The Rasgullas will double in size while cooking, so make sure to leave enough space for them to expand.

After 15 minutes, remove the pot from the heat and let the Rasgullas cool down to room temperature.

You can serve Rasgullas at room temperature, or for a more refreshing taste, chill them in the refrigerator for a few hours.

If desired, garnish the Rasgullas with a pinch of cardamom powder, saffron strands, and chopped pistachios or almonds before serving.

Rasgullas are best enjoyed when served chilled. They can be stored in the refrigerator for up to 3-4 days.

Note: The consistency of the paneer is crucial in making soft Rasgullas. If the paneer is too dry, the Rasgullas may turn out hard. On the other hand, if the paneer is too moist, the Rasgullas may disintegrate while cooking. Adjust the moisture content by squeezing out excess liquid or adding a little milk powder during kneading, if needed.
