
Basmati pulao is a fragrant rice dish made with basmati rice, spices, and various vegetables or meat. It is a popular dish in the Indian subcontinent and is known for its rich flavors and aromatic spices. Here’s a basic recipe for preparing basmati pulao:
Ingredients:
1 cup basmati rice
2 tablespoons ghee (clarified butter) or oil
1 medium-sized onion, thinly sliced
1 teaspoon cumin seeds
4-5 whole cloves
2-3 green cardamom pods
1-inch cinnamon stick
1 bay leaf
1 teaspoon ginger-garlic paste
1 medium-sized tomato, chopped
Assorted vegetables (such as peas, carrots, beans) – chopped (optional)
1 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
Salt to taste
2 cups water
Fresh cilantro leaves for garnishing (optional)
Instructions:
Wash the basmati rice under running water until the water runs clear. Soak the rice in water for about 30 minutes, then drain and set aside.
Heat ghee or oil in a large pan or pot over medium heat. Add cumin seeds, cloves, cardamom pods, cinnamon stick, and bay leaf. Saute for a minute until the spices release their aroma.
Add the sliced onions to the pot and sauté until they turn golden brown.
Stir in the ginger-garlic paste and cook for another minute until the raw smell disappears.
Add the chopped tomatoes and cook until they become soft and mushy.
If you’re using vegetables, add them to the pot and sauté for a few minutes.
Add turmeric powder, red chili powder, and salt. Mix well to coat the vegetables with the spices.
Add the soaked and drained basmati rice to the pot and gently stir to combine it with the spices and vegetables. Be careful not to break the rice grains.
Pour in the water and bring it to a boil. Once it boils, reduce the heat to low, cover the pot with a tight-fitting lid, and let it simmer for about 15-20 minutes or until the rice is cooked and all the water has been absorbed.
Once the rice is cooked, turn off the heat and let it sit covered for another 5 minutes to steam.
Fluff the rice gently with a fork to separate the grains. Garnish with fresh cilantro leaves if desired.
Your basmati pulao is now ready to be served. It pairs well with raita (yogurt sauce) or any curry of your choice.
