Gulab jamun

Here’s a recipe for Gulab Jamun, a popular Indian sweet:

Ingredients:

1 cup milk powder
1/4 cup all-purpose flour
1/4 teaspoon baking powder
2 tablespoons ghee (clarified butter)
2 tablespoons milk (warm)
A pinch of cardamom powder
Vegetable oil (for deep frying)
For the sugar syrup:
1.5 cups sugar
1.5 cups water
A few saffron strands (optional)
1/2 teaspoon rose water
Instructions:

Start by preparing the sugar syrup. In a saucepan, combine the sugar and water and bring it to a boil over medium heat. Stir until the sugar is completely dissolved. If using saffron strands, crush them and add to the syrup. Simmer the syrup for about 5 minutes, then remove from heat and add the rose water. Set aside to cool.

In a mixing bowl, combine the milk powder, all-purpose flour, and baking powder. Mix well to ensure there are no lumps.

Add the ghee to the dry ingredients and mix until it resembles a crumbly texture. Then, gradually add the warm milk and knead the mixture to form a soft and smooth dough. If the dough feels dry, you can add a little more milk.

Divide the dough into small portions and roll them into smooth balls. Make sure there are no cracks on the surface.

Heat vegetable oil in a deep pan or kadai over medium heat. To check if the oil is ready, drop a small piece of dough into the oil. If it rises to the surface gradually and sizzles, the oil is at the right temperature.

Once the oil is hot, carefully add the gulab jamun balls to the pan, a few at a time. Fry them on low to medium heat, turning them gently to ensure they cook evenly and attain a golden brown color. Be cautious not to overcrowd the pan.

Once the gulab jamuns are evenly fried, remove them from the oil using a slotted spoon and drain excess oil on a paper towel.

Let the fried gulab jamuns cool for a few minutes. Then, drop them into the prepared sugar syrup. Allow them to soak in the syrup for at least 30 minutes to 1 hour so that they become soft and absorb the flavors.

Serve the Gulab Jamuns warm or at room temperature, garnished with chopped nuts if desired.
