Ingredients:
500 grams boneless chicken, cut into bite-sized pieces
1 tablespoon soy sauce
1 tablespoon vinegar
2 tablespoons cornflour
2 tablespoons all-purpose flour
1 teaspoon red chili powder (adjust according to your spice preference)
1/2 teaspoon black pepper powder
Salt to taste
Vegetable oil for frying
1 onion, thinly sliced
1 bell pepper (capsicum), thinly sliced
2-3 green chilies, slit
2 tablespoons garlic, minced
2 tablespoons ginger, minced
2 tablespoons tomato ketchup
1 tablespoon soy sauce
1 tablespoon green chili sauce
1 tablespoon red chili sauce
1 tablespoon vinegar
1 teaspoon sugar
Spring onions, chopped (for garnish)
Instructions:
In a bowl, marinate the chicken with soy sauce, vinegar, salt, and black pepper powder. Let it rest for about 15-20 minutes.
In a separate bowl, combine cornflour, all-purpose flour, red chili powder, salt, and a little water to make a smooth batter.
Heat oil in a deep pan or wok for frying.
Dip each marinated chicken piece into the batter, making sure it is coated well, and deep fry until golden brown and crispy. Drain on a paper towel to remove excess oil.
In a separate pan, heat a little oil and add minced garlic and ginger. Sauté for a minute until fragrant.
Add sliced onions, bell peppers, and green chilies to the pan. Stir-fry on high heat for a few minutes until they are slightly cooked but still retain their crunch.
In a small bowl, mix together tomato ketchup, soy sauce, green chili sauce, red chili sauce, vinegar, and sugar. Pour this sauce over the stir-fried vegetables and mix well.
Add the fried chicken to the pan and toss everything together, ensuring that the sauce coats the chicken and vegetables evenly.
Cook for a couple of minutes until everything is heated through.
Garnish with chopped spring onions and serve hot with steamed rice or noodles.
