Kulfi

Here’s a recipe for homemade kulfi, a popular Indian frozen dessert:

Ingredients:

4 cups full-fat milk
1/2 cup condensed milk
1/4 cup sugar (adjust according to your taste)
1/4 cup chopped nuts (such as pistachios, almonds, or cashews)
1/2 teaspoon cardamom powder
A pinch of saffron strands (optional)
Kulfi molds or small disposable cups
Popsicle sticks or wooden skewers
Instructions:

Pour the milk into a heavy-bottomed pan and bring it to a boil over medium heat, stirring occasionally to prevent it from burning.
Once the milk starts boiling, reduce the heat to low and let it simmer. Stir occasionally to prevent the milk from sticking to the bottom of the pan.
Simmer the milk for about 45-60 minutes or until it reduces to approximately one-third of its original volume. Stir occasionally during this process.
Add the condensed milk and sugar to the reduced milk and stir well. Continue cooking for another 5-10 minutes until the mixture thickens slightly.
Remove the pan from the heat and let the mixture cool down to room temperature.
Once the mixture has cooled, add the chopped nuts, cardamom powder, and saffron strands (if using). Mix well to combine all the ingredients.
Pour the mixture into kulfi molds or small disposable cups. If using disposable cups, cover each cup with aluminum foil and make a small slit in the center. Insert a popsicle stick or wooden skewer into each cup through the slit.
Place the molds or cups in the freezer and let them set for at least 6-8 hours, or preferably overnight.
Once the kulfi is completely frozen, remove it from the molds or cups. If using disposable cups, simply tear off the cup before serving.
Serve the kulfi chilled and enjoy the rich and creamy Indian dessert!
Note: You can experiment with flavors by adding ingredients like rose water, mango pulp, or crushed cardamom seeds to give your kulfi a unique twist. Also, feel free to adjust the sweetness according to your preference.
