
Here’s a recipe for Rogan Josh, a popular Kashmiri dish:
Ingredients:
500 grams (1 lb) lamb, cut into pieces
2 tablespoons vegetable oil
2 onions, finely chopped
4 garlic cloves, minced
1-inch piece of ginger, grated
2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon ground turmeric
1 teaspoon paprika
1 teaspoon Kashmiri red chili powder (adjust to taste)
1 teaspoon garam masala
1 cup plain yogurt, whisked
2 tomatoes, finely chopped
1 cup water
Salt to taste
Fresh cilantro (coriander leaves) for garnish
Instructions:
Heat the vegetable oil in a large, heavy-bottomed pan over medium heat. Add the chopped onions and cook until golden brown.
Add the minced garlic and grated ginger to the pan and sauté for a minute until fragrant.
In a small bowl, combine the ground cumin, ground coriander, ground turmeric, paprika, Kashmiri red chili powder, and garam masala. Mix well.
Add the spice mixture to the pan and cook for a minute, stirring constantly to prevent burning.
Add the lamb pieces to the pan and cook until browned on all sides.
Reduce the heat to low and add the whisked yogurt to the pan. Stir well to coat the lamb pieces with the yogurt.
Add the chopped tomatoes and cook for a few minutes until they soften.
Pour in the water and season with salt to taste. Stir everything together, then cover the pan and simmer for about 1 to 1.5 hours until the lamb is tender and the flavors have melded together. If needed, you can add more water during cooking to maintain the desired consistency.
Once the lamb is cooked, remove the pan from heat and garnish with fresh cilantro.
Serve the Rogan Josh hot with steamed rice or naan bread.
