Ingredients:

2 lbs (900g) chicken pieces (legs, thighs, or bone-in breast)
1 cup plain yogurt
2 tablespoons lemon juice
2 tablespoons vegetable oil
2 tablespoons Tandoori masala (a blend of spices readily available in stores)
1 tablespoon ginger-garlic paste (or finely minced ginger and garlic)
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon paprika
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (adjust to taste)
Salt to taste
Fresh cilantro leaves for garnish
Lemon wedges for serving
Instructions:

In a large bowl, combine the yogurt, lemon juice, vegetable oil, Tandoori masala, ginger-garlic paste, ground cumin, ground coriander, paprika, turmeric powder, red chili powder, and salt. Mix well to form a smooth marinade.

Make deep incisions on the chicken pieces with a sharp knife. This will help the marinade penetrate the meat better.

Add the chicken pieces to the marinade, making sure they are well coated. Cover the bowl and let the chicken marinate in the refrigerator for at least 2 hours, or ideally overnight, to allow the flavors to develop.

Preheat your oven to the highest temperature setting or use a grill preheated to medium-high heat.

If using an oven, place a wire rack on a baking sheet lined with aluminum foil. If using a grill, oil the grates to prevent sticking.

Arrange the marinated chicken pieces on the wire rack or grill, leaving some space between them.

Cook the chicken in the preheated oven or on the grill for about 25-30 minutes, or until the chicken is cooked through and the skin is charred in places. Turn the chicken pieces halfway through the cooking time for even browning.

Once cooked, remove the chicken from the oven or grill and let it rest for a few minutes.

Garnish with fresh cilantro leaves and serve hot with lemon wedges on the side.
