Ingredients for Koftas:

2 cups grated paneer (Indian cottage cheese)
1/4 cup grated carrots
1/4 cup grated potatoes
1/4 cup chopped cashews
1/4 cup chopped cilantro (coriander leaves)
2 tablespoons cornstarch or all-purpose flour
1 teaspoon ginger paste
1 teaspoon garlic paste
1/2 teaspoon garam masala
Salt to taste
Oil for frying
Ingredients for Gravy:

2 tablespoons ghee or vegetable oil
1 large onion, finely chopped
2 teaspoons ginger paste
2 teaspoons garlic paste
2 large tomatoes, pureed
1/2 cup cashew nuts, soaked in warm water for 15 minutes and ground to a paste
1 teaspoon red chili powder
1 teaspoon turmeric powder
1 teaspoon coriander powder
1/2 teaspoon garam masala
1 cup heavy cream
Salt to taste
Water as needed
Chopped cilantro for garnish
Instructions:

In a large mixing bowl, combine grated paneer, grated carrots, grated potatoes, chopped cashews, chopped cilantro, cornstarch or all-purpose flour, ginger paste, garlic paste, garam masala, and salt. Mix everything together until well combined.

Divide the mixture into small portions and shape them into round koftas or dumplings. Set aside.

Heat oil in a deep pan or kadai over medium heat. Once the oil is hot, carefully drop the koftas into the oil and fry them until golden brown and crispy. Remove the fried koftas using a slotted spoon and place them on a paper towel-lined plate to absorb excess oil.

In a separate large pan, heat ghee or vegetable oil over medium heat. Add the chopped onions and sauté until they turn golden brown.

Add ginger paste and garlic paste to the pan and cook for a minute until the raw aroma disappears.

Add the pureed tomatoes and cook until the oil starts to separate from the mixture.

Stir in the cashew paste, red chili powder, turmeric powder, coriander powder, garam masala, and salt. Cook for a couple of minutes, stirring constantly.

Reduce the heat to low and slowly pour in the heavy cream. Mix well to combine.

Add water as needed to adjust the consistency of the gravy. Simmer for 5-7 minutes.

Gently place the fried koftas into the gravy and cook for another 2-3 minutes, allowing the koftas to soak in the flavors of the gravy.

Remove from heat and garnish with chopped cilantro.
